Naked or bottomless portafilters allow the barista to instantly see when the proper tamping technique has been achieved. In the hands of an experienced barista with fresh espresso beans, a bottomless portafilter will yield 50% or more crema because the espresso shot will come into contact with no surface other than the bottom of your portafilter basket. This keeps the tiny crema bubbles we all look for in a perfect shot, intact and unharmed. The more crema, the more flavour.
